Works for me- brownie baking tip and recipe

browniesNo more waiting forever for brownies to cool, no messy cutting, shorter baking time and they come out the perfect size by baking them in a muffin/cupcake baking pan with paper cups. These would be a great idea for your next bake sale.

I also wanted to share this healthy brownie recipe that my friend and fellow Moms in Business Member Rosa of DeaBella Jewelry raves about.

Zucchini Brownies

1 3/4 cups whole wheat pastry flour

1/4 cup ground flax seed

1 1/2 tsp baking soda

1/3 cup unsweetened cocoa

1/4 cup pitted prune puree

1/4 cup extra light olive oil

2 teaspoons vanilla extract

2 eggs( organic)

1/2 cup sugar or Rapadura

3/4 cup brown sugar

2 cups grated zucchini squeeze out liquid

1/3 cup chopped walnuts

1/3 cup mini chocolate chips

in a medium bowl mix flour, ground flax ,cocoa and baking soda, set aside.
Combine eggs, oil, prunes ,vanilla, with a wire whisk.
Add sugars to egg mixture and mix well.
Stir in dry ingredients,then fol in the zucchini until well blended,do not over mix.
Add mini chocolate chips and walnuts.
Spread batter into a 9×13 inch pan.
Bake at 350 for 18-22 minutes until toothpick comes out clean.

    Thanks so much for giving me some props and adding my website link to your blog. Did you make those cupcakes using the recipie that I sent you? They look way more moist than when I make them,maybe I should try the cupcake version because they look YUMMY!!! Keep writing I love to read blogs and you also need to add to your 100 things about me. I love to read tibits about the people I know that I would never think to ask or get to know. Maybe we should do a shorter version of that for mib once so that we can become more personable with each other.
